Many cold weather crops actually taste sweeter if you harvest them after a frost instead of right before one.

I really never thought about them possibly needing frost. I ate my kale in the summer, thought it was awful. But then I also eat my broccoli in the summer and it takes fine, No choice but to cut it then as broccoli does not wait.
