Well woofie, it just so happens some things have happened in my life which have made me have to use a recipe at least until I get around to tweaking everything. Hilarious!
Woofie, I now have celiac disease which means that I CAN NOT have gluten (wheat, barley, rye) or anything cross contaminated with gluten. SO, now I use Bob's Red Mill gluten free cornbread mix. Follow the recipe on the back of the bag. Only you will have to add more milk than it says b/c it's very, very thick & especially for making in the frying pan. But you'll know when the consistency is right. I guarantee you it doesn't taste "weird". It's really quite good. A lot of gluten free things can taste strange but THIS does not! Enjoy m'dear! Woofie, use Leon's recipe just as he posted it and when you get to the milk I'd say use a little less than a cup. You want it thick enough that it doesn't run, doesn't spread across the hot oil ion the pan. Maybe 2/3 cup.

Well, I'm something of a purist, and don't buy mixes.
But, I wonder if you could use masa harina as a replacement for flour in some recipes.

OK, Woof. Try this:

1 1/2 C corn meal
1/2 C all purpose flour
1 1/4 C buttermilk
2 T olive oil
1 1/2 t baking powder
1 egg

T = tablespoon
t = teaspoon
C = cup

Then follow Leon's recipe. If it's too runny, then add a bit more meal and next time use less buttermilk.
Am I going to have to come out there and cook it for you????

I know you can buy dry Lima beans and I do buy dry beans, mostly black beans. But these days I usually don't even buy my Lima beans frozen, I just get canned. With the frozen, you have to cook them for a long time to get them soft the way I like them. The canned ones are nice and soft straight out of the can. You only have to heat them up.

If I get hungry for a before bedtime snack or between meal snack, I often open a can of lima beans and just eat them. I do heat them first. I do the same thing with cans of peas. Hilarious! I guess I am rather peculiar. Hilarious!

I eat the canned large size Limas. But if I buy frozen, I buy the baby limas. Those frozen baby limas are really good.

I also like to have succotash. Easy enough to mix up ones own with a large can of lima beans and a smaller can of corn.

And don't be afraid to make a mistake. That's how I learned when my DBW (Dearly Beloved Wife) went back to work many years ago. I either had to sink or swim when she was out of the house (or starve to death). Just relax, lighten up a bit and put on your adventure cap: Just don't get the oil too hot like I use to do and set the smoke alarm off! The kids thought I was burning the house down! *Blush* Big Grin

I don't care for the canned ones, although my Mom loved them. Never tried frozen, but the dried ones cook so quickly and are sooooo good!

Leon, I'm generally pretty adventurous when it comes to food, but I don't have a good handle on the proportions of baked-type stuff, so I like a starting place. Heh, you should have seen the results when my DH "tried" making bannock without a recipe...can you say library paste?

The canned ones are soft right away, which is what I like. If I cooked for anyone other than just me, I would use the frozen ones instead. But I am lazy. Open can, heat and eat! Rolling my eyes.

Edited to add: My mom actually saved bacon drippings in a green Mason canning jar. We never ran out and the
'crispy-crunchy' pieces were added to the bean pot or fried potatoes.

Warning: If you girls do any articles on fried potatoes & broccoli skillets you won't be able to shut me up!
