The Bean

By Sharon

If you could grow only one vegetable, one that would provide the most nutrition for you and your family, what would it be?

Absolutely!!!!! YUM!!!!!

I can eat any "whole foods" excepting wheat, barley, rye, semolia, triticale & a few lesser known grains.

Veggies of any kind are on the table. All fresh meats but one must check labels on processed meats. All fruits are good to go. Any processed foods must be checked but most all fresh & frozen fruits & veggies are fine; I just have to watch things that have "sauce" if they are frozen. All whole dairy is fine. Eggs are fine. Honestly, it's a healthier eating style if you think about it. A great deal of those processed foods have gone by the wayside. I've adapted quite well & very easily once I learned all the rules & there are MANY. The only drawback is having to cook all the time.

It may be that this was easier for me than many because essentially my mom raised us this way in the first place. We didn't eat many processed foods when I was growing up.

Mexican food relieves on beans a lot. Beans and rice and the flat bread made into tortillas. I love bean burritos. Smiling Thumbs up Have them often from Taco Bell.

Sometimes I worry about what's in the food from chain restaurants, like Taco Bell or Cracker Barrel, places like that where sauces and often entire offerings are often processed and have additives that we know nothing about. I have a severe allergy to red food dye and go into anaphylactic shock when I ingest it. For that reason I have to be very careful when I eat out. So mostly I don't go where packaged food is offered. Red dye is everywhere! And so is packaged food.

I don't eat out much anyway, but still have to be careful even at the grocery. Another reason why I like to grow my own.

Ann, I'm so glad you have found the best 'road to recovery' for you. Thumbs up

You & I will just keep reading those labels Sharon. Thumbs up They are rather an eye opener aren't they? I find myself these days ending up putting things back on the shelf when I see they have 10 or more ingredients in them, especially those ingredients with the names we can't pronounce.

Oh Sharon, so sorry that you have to be so careful of food because of that red dye allergy. It is true, so many hidden additives. Fortunately for me, not bothered by these things. I do like Taco Bell, I have Taco Bell Food somewhat often.

Ann, you really have done marvelously adjusting to the Gluten free way of eating.

Exactly. The numbers of additives are mind boggling. And if you look closely, there's dye in just about every single thing. Except beans. Smiling

And they make those ingredient labels with such small print that I can hardly read them! Grumbling

The closest Taco Bell is about 10 miles away from me so not convenient really, so I'm not tempted to sample their products though I do know others who love their bean burritos.

Yep about the labels, Rita.
I stick my readers on top of my head every time I go to the grocery, just to read the labels.

Taco Bell right here in town very close. In fact on my side of town so I really don't drive far at all. I find myself going to Taco Bell mostly for fast food as these days I hardly ever have a Big Mac or Whopper. Maybe about once every six months. I think of the many fast food choices it is about one of the best. They have this really great Cantino Bell Salad. Avocado dressing, steak, rice and lots of salad. It is really good. So I like that, I like the burritos and I also like soft tacos. Lots of goodies there at Taco Bell.

The red dye thing taught me to grab my glasses before I even get in my car, otherwise I might grab something with the dye in it. You just never know where it might appear.

My DIL is from Panama and she makes the best black beans! And Lentils! And really, any kind of bean. That's one of the reasons we are trying to grow some new types.

I did not grow up eating beans except green beans, fresh and home canned so I didn't think I would like black beans. I am glad I tasted hers first. Oh, we did occasionally have white navy bean soup and i've always loved that.

I have been wanting to make bean burgers but just have never gotten around to doing it.

If you like black beans, make the burgers from them. I made them tonight and they are so good. I vary mine from one time to the next by adding this or that and tonight in addition to the spices and a few herbs, I added a leftover baked potato that I mashed and a chunk of chopped and steamed cabbage. I did use an egg to help bind it all together. They were so good I only had a salad of grapes and apples with them.

And that's the other thing, beans are so versatile, there are a lot of things you can do with them aside from just steamed, grilled, or sauteed.

Black beans are just sooooooo good. The taste is different from the red kidney beans that are commonly used for chili. But I mix it up. Sometimes kidney beans, sometimes black beans. But the black beans are very much my favorite.

And sometimes I mix the beans in the burgers. Blended flavors add a new taste to them.

Oh, and I'd meant to mention, Rita, that I knew about combining beans and rice to make a complete protein, but didn't know that about corn and beans. All the more reason to have that cornbread with beans!

That is a really dangerous allergy to have, Shar! You're right about red dye being in almost everything! I keep a small magnifying glass in my purse, in case of that fine print...which seems to get smaller every day! Hilarious!
