When cutting the brown tips off of plants, should I leave a little bit of the brown part or should I cut all the brown part and into the green?

I don't like trimming into green for numerous reasons, most of which is that the would exposes the plant to pathogens. My advice for most plants would be to trim away the brown but leave the tiniest bit so you're not cutting into the living tissue.
