Elderberries

Living in Washington State for two years resulted in my first introduction to elderberries (Sambucus sp.). A friend took me on a hike into the woods and showed me where they were and how to identify them. The resulting jelly was wonderful.

I used to make elderberry jelly but found it to be a bit strong. Instead of using three cups of elderberry juice I put in one cup of apple juice. I found the jelly to be delicious with that change. Everyone has different preferences, but I thought I would add this suggestion in case someone would like to try it.

Native Plants and Wildflowers
This is only the end of a 40 ft hedge row but I never have a chance at the berries. The birds get them before I can! At least I can enjoy the fragrance that wafts with the breeze while I am gardening and dream of the jelly I could have made.

That is one attractive hedge row. Lots of heady fragrance from all those plants, I'm sure. How old is the hedge?
