I have had Belle Cook for 3 years and all of a sudden she is making a double flower about 1/3 of the time. What causes this? It is lovely but the last 2 years she has been a lovely single.

I don't have any idea why it would suddenly be making doubles, but I do prefer the single version.

Most daylilies here will have make doubles at some point in their bloom cycles. I'm not sure if it is water or humidity that does it for us

I love Belle Cook as a single, she is hardy, lush and blooms like crazy. I just was waiting and watching for that first fat pod to bloom and it was a huge double. Then she kept on doing it, some doubles, some singles. She needs to be divided this year she is really big.

Belle Cook has Barbara Mitchell (BM) in her ancestry and BM has the ability to produce double offspring. Both of Belle's parents, Ed Brown and Seminole Wind have produced double (or polymerous) seedlings. Given the necessary environmental conditions I would expect Belle Cook to produce some double flowers (or polymerous flowers).
