It's been zucchini casserole, breads, smoothies, fritters and pickles here non stop for the last few weeks. Today I found a recipe for Zucchini crust Pizza. OMG it came out awesome. My son and I just ate 3/4 of the pie. This recipe used an entire baseball bat sized zucchini just in making the crust. I have the recipe if anyone is interested.

That looks wonderful, Karen! I wouldn't make it though, because I'm cooking only for myself, & it probably wouldn't be as good the next day.....I don't have an overabundance of anything right now, but I brought home beans, cukes, & beets from my son's......will be making bean salad, bread & butter pickles, & cold borcht.

Making this right now. Can't wait to see how it turns out. That will be one less baseball bat size zucchini off the kitchen table.

Last nights dinner. Garlic crusted Zucchini/Eggplant Pizza with fresh herbs, homemade salsa used as the pizza sauce, topped with zucchini and eggplant slices, fresh romano and parmesan cheese, Black Krim and Black Prince tomato slices, sprinkle of sea salt and pepper and little cheddar cheese on top. The kids and I devoured it in a matter of minutes. Came out awesome!

Thanks.....I did bake the zucchini (apple) bars this morning. OMGGGGGGGGGG it's to die for. No one will every know it's made from zucchini ,no apples what so ever in it. Everyone I gave a sample to said it had to be apple in it. The look of surprise when I said nope it's zucchini. This recipe is getting laminated to the inside of my kitchen cabinet door so I will never loose it.

Zucchini (apple) bars are in the oven!

I used the large mystery green squash for this recipe above. Turns out the squash looks and taste just like a normal zucchini. I did save some of the seeds to plant next year to see what grows. Glad I remembered this posting to find the recipe because I never laminated it to the kitchen door LOL.

Today we are canning-- stewed tomatoes: tomatoes (plum tomatoes), peppers, onions, celery, garlic, fresh oregano,"pizza thyme", basil.....we use this as a base for sauces, stews, and pizza, and often eat it cold as a side for meat entrees.
Already made tomato jam and will have enough tomatoes for one more batch soon.
Our zucchini all but gone, so are the yellow squash...pumpkins are turning orange already!
Our brother took 65 (yep, he counted 'em, lol)plum and beefsteak tomatoes, made sauce last week, for our upcoming church spaghetti supper (Oct 11). Added to sauce from other "gardener" parishioners , it looks to be a delicious event, especially since our Mark is an experienced chef. So nice to have cooks in the family, and to help out in the garden, especially since hubby has been in hospital, (doing better at home now)---so our garden has been taken care of, and all veggies saved and/or eaten. Smiling
