Only time my parents made horseradish, we had to evacuate the house! They added shredded raw beets to theirs......

The Horseradish has been a huge hit. Gave some out to a few people and they loved it. It seems to get more potent as it's aging .

Over the past week Hubby and I have collected 30 plus pumpkins all uncarved that people have put out for recycling, friends gave to us as well. I've been roasting them and pureeing them one at a time and baking non stop to give as gifts to friends, neighbors, coworkers and family. Several of the pumpkins weigh more than 28lbs and some are white pumpkins. Been making mini bread loaves, reg. bread loaves, pumpkin jam, pumpkin pie and tonight I made a huge batch of the best pumpkin waffles ever.

Marilyn, just taking advantage of not letting these pumpkins go to waste. I am amazed at how many people buy pumpkins, never carve them, leave them sit outside for a short time for a display and then toss them to the curb. 3/4 of the pumpkins we got still have the price in marker on them. Most of them cost $9.99 and a few are labeled at $14.99. We've picked up over $140.00 worth of pumpkins for free. I placed my carved pumpkins in a pile out by my rose bushes and the wildlife animals have been working them over nightly. I hate to see food go to waste. All other pumpkin bits I have go into the compost or buried into the garden soil. Two pumpkin halves went to the chickens, one filled with water and the other filled with Chicken feed. The girls love it.
My dogs as well as my Chickens love pumpkin puree mixed in with there food. For me it's a win win.....

I brought a loaf of pumpkin bread to my neighbor last night, I also told them it was made from the pumpkins I picked up in front of there house. The lady tells me "oh, I didn't know you could eat them" Me: Well where do you think pumpkin puree in a can comes from? She had to think about that for a minute. About an hour after me coming home after delivering the bread to her she came over and asked me for the recipe and how one goes about cutting the pumpkin up and cooking it. They still have two pumpkins sitting on there dining room table. Guess she won't be tossing out pumpkins anymore.

Many years ago I used to grow a lot of green beans. Back when there were more people at home to eat them. Then didn't grow beans for years and later went back to only growing afew teepee type set ups.

This year I am back to growing a large amount of green beans as I have both bush beans and sets up for longer runs of trellised pole beans.

I am trying to think of a nice easy summer meal I could make from them as I will have plenty.

Thinking of just cooking up some bacon and lightly stir flying the beans with the bacon. Looking for something more exciting than the usual just boil them up plain.

You can make summer cold soup with them ....if you have yellow beans, cook in chicken broth & puree them...add curry to taste, & 1/2 & 1/2 or whole milk......I cook green beans along with zucchini & onions in broth.....then puree & add fresh dill & cream or whole milk.....

Since I have been picking both cucumbers and tomatoes I have been eating a cucumber and tomato salad daily. Sometimes I also just slice up the cucumber and just eat it as a snack.

Lots of summer squashes here. So make kinda a veggie stew by lightly sauteing. Also have been lightly steaming green beans. Ate some of my favorite tomato sandwiches. Lots of veggie eating going on here.

Stewed veggies. Eggplant, peppers, zucchini and tomatoes. So good. Made by a very good friend and shared some.

Yes, it was totally drool worthy!! Drooling Drooling Drooling

I can brag because it was not cooked by me. I am a great grower of plants and veggies but nope, not at all a great cook.

My neighbor is an exceptional cook.

No, that neighbor ( with 2 barking Westies) and I just are pleasant to each other. This is the neighbor on the other side and we are good friends.

Ah, I seem to always get them mixed up. Big Grin
So this is the neighbor that hints about getting the vegetables, but always brings you some of whatever she makes with them? Smiling
