Just checking to see if you eat the tubers? If so how do you prepare them? Are they difficult to grow and harvest? What do they taste like?

I do. It took a few years to figure out how to get a crop. I have learned to grow them in large containers. I still haven't checked my crop for this year because the longer they are in the ground the better the harvest. When I lift them all I do is wash them off. They a nice crunch to salads with a taste a bit like raw potato. I keep a few in the refrigerator to plant next year.
