This photo of our snow peas shows the results of extremely hot weather for many days here in the I 95 corridor of Southeastern Pennsylvania. (Today the temp is mid nineties and the heat index is 105!). This means slightly tough snowpeas with mature peas---so what to do???
They are still delicious: how do we love 'em..let me count some of the ways....
A. steam about 2 minutes to tenderize before eating
B. Saute in coconut oil and butter for 3 minutes
C. Steam, then cool and use ranch dressing as a dip...dip and munch, dip and munch
D. Saute with "Roasted Garlic & Herbs" seasoning by Weber
E. Serve them glazed with carrots: a medley of carrots and snowpeas glazed with honey is so delicious (cook your carrots first, glaze with honey and butter, then add snowpeas for the last 3 minutes of cooking)...Oh Yum
SO, do not worry if the weather is Hot Hot Hot...these peas can still be delicious.....we think so, anyway.
