Hi, I thought I would share my Garden Salsa recipe with my friends on this forum.
Please add your favorites too. I have had this requested so maybe others will like to try it too.

My fresh Garden Salsa

1 gallon peeled/diced tomatoes
1 c. chopped onion
2 diced gr pepper
1/4 c j. hot pepper diced
3 Tbs minced garlic
1/2 bunch of cilantro stemmed and chopped
4 tsp salt
blk pepper to taste
12 oz tomato paste
3/4 c. vinegar
2 tbs sugar
lime juice optional
This recipe can be tweaked to your personal taste. I make some batches hotter than others. Just removed skins after a hot water bath, and chop tomatoes.
Add other ingredients. Bring to a slow boil for 5-10 min. Pour into warmed jars. Seal, I have not had a problem with them sealing without a hot water batch.9 to 10 pints
