I pull most of the amaranth before it goes to seed but I leave some for the birds over winter and they love it!

You've had your hands full! Kitchen remodel, I'm jealous! We have just been doing the outside stuff, someday I hope to start tackling the house. We need a new roof so that's first on the list.
