What a beautiful assortment of veggies! But... the artichoke appears to be just leaves -- where is the "bud" or whatever the thing that is edible is called?

It is called a choke.....if left to mature it is a blossom. Artichokes are mainly ornamentals here. Here is one with chokes.....

It's so much fun going to the farmers markets. We have several outstanding ones in our area that have everything you can imagine, and it all has to be handmade. The breads are to die for!!!
