Perhaps this is common knowledge but when you choose a squash you want it to be mature for best flavor. An easy way to determine this is to take your thumb-nail and press against the skin. If the squash is mature your nail will make little or no indentation. If your nail cuts into the skin and the area is moist the squash if not mature yet and will not have the full rich flavor we are looking for.......
