I have this Agave that I originally bought as a 'normal' Agave plant, growing on the ground. It has started to form a stem like a tree trunk.
The foliage is variegated, has a sharp tip, and is fibrous like most Agaves.
It is now about 8 ft tall.
Does anyone know what it is?

Not an Agave at all - this looks to be in the Yucca family.

OK, I think I have found it. It would appear to be Yucca elephantipes (variegated)

Hi Hetty:

I have the solid green ones in my backyard, a gift from my neighbor who cuts the tops off of her plants and sticks them in the soil to root. The variegated version is really pretty!

The plant is already very big and according to reports can get to 30 ft tall Blinking so it will be a donation to the new succulent area in the Naples Botanical Garden soon! Angel
