The roots can go up to 4 feet deep (oh, yes, I speak from experience), so dig deep. RoundUp will eventually kill it, but any tiny bit of root will happily sprout up again. I've been fighting it for 20 years and have knocked it back a bit...
The pink flowered plant I had in mind is Lady's Thumb Polygonum persicaria, a related species
All are edible,however some species may cause light-sensitive reactions

I've become more aware of it since these comments and I'm seeing HUGE stands of it on the roadside here and there. The photos I posted are of a stand that's been there for quite a few years but, as it's in deep shade fighting with the White Pines for resources, it hasn't really expanded. There were several seedlings however which have been dealt with.
