Hi,

This plant popped up in one of my pots, and I did not remove it considering that it could be something edible. Could anybody please identify it?

Yes, edible.
compare with amaranth.
Lots of amaranth varieties, you'll need to wait till it gets larger to get a positive id on specific cultivar.
