Wow. Dave, I had heard you once before on a you tube video but this was so interesting and informative.
I truly nearly choked on my coffee when you said " some time you can render fat on a lazy winter morning". Yep, that's what I like to do too.

Dave was an easy interview. Sometimes I have to coax people to talk but I think I stepped on Dave a few times. Its easy to see why everyone holds him in high esteem.

Yep, we hold our Dave & his lovely wife Trish in high regard. They are a wonderful family, I've never even met them in person but I just know!

Dave I really enjoyed your interview with Jason, it was very informative, and I enjoyed hearing about you, the farm and your lovely family. I so agreed with you about the pork, it is just too lean, pork fat rules!!!

It was nice to hear your voice, you sounded much as I imagined you would, I now have the voice to go with the face.
