Schimmeig Striped Hollow aka Schimmeig Stoo, Striped Cavern, Striped Stuffer
80 days. Lycopersicon esculentum. Plant produces good yields of 5" long red bell pepper shaped tomatoes. Very attractive hollow stuffing tomato. Make an excellent tuna stuffers! Indeterminate. Hybidized by Tom Wagner in the 70's. According to Tom, Schimmeig Stoo means Striped Hollow in the Gaelic/Norse language of his grandfather on his Mom's side.
The fruit is striking with the bell pepper shape and pretty stripes. But like others, I found the flavor to be bland. So what to do with this tomato?
Suggestions were to stuff chicken salad, egg salad, etc. into this tomato as it makes an attractive cup. I found that I wanted a truly juicy regular tomato to back these fillings.
As I grew this tomato and didn't know what to do with it at harvest, I cut out the top & removed the seeds, place them on a cookie sheet, froze them and then bagged them up.
During the winter I finally came up with this recipe and it turned out to be delightful. I am growing "Striped Cavern" again this summer and will continue to freeze and use this way. This winter I will be developing other recipes that can be used with the hollow tomatoes.
