It is easy to make, and all you need to make it is kosher salt, coriander, brown sugar and some vinegar. Couldn't be easier and the results are really good.

I've made biltong from beef and venison. Any game would do well, I think. I don't know that I would want to biltong pork or chicken, though. The venison biltong we made last month was VERY delicious.

You could get a big lump of beef roast from the grocery market and make biltong with it. I believe you would be happy with the results.

This sounds familiar, though I haven't made it myself. Does goose sound like a good choice? I think that I've had it prepared this way; if so, it was delicious!


Dave, I'm only about 3/4 of the way through the podcast as well, but is permaculture the term you'd rather use for the word organic? Or, do you have another that you prefer?

I really don't know about goose for biltong. I'd be worried about salmonella.

I used the word organic because I couldn't think of another term. Permaculture is something vastly more complex than simply organic so it isn't a drop-in replacement for it. Smiling
