I only like cabbage raw and a large head is just too much for me to eat before it starts rotting

There are a lot of them. If you like the cute little pointed head cabbages, Caraflex, Point One, Early Jersey Wakefield. For small round heads, Gonzales, Gregorian, Charmant, Fast Vantage, Katarina, Stonehead, Golden Acre. These are just the few that I an familiar with.

Thanks to Dillard, I will look for some of those too.

Another option would be to grow a "loose leaf" cabbage/kale like the Portugese Tronchuda Beira . Some call it a cabbage and others call it kale.
