I really did not realize bagels are baked! I thought they were boiled somehow (maybe before baking?). You can tell I never saw a bagel until I went to college. We did not have bagels in Henderson, NC when I was growing up - they were exotic NY food. Now I only get a bagel occasionally from Breugger's (like a hot one with hazelnut coffee). So do you boil them first?
