was thinking that what you serve may depend on the time of day. If this tour is early morning on schedule or later afternoon.... for instance fruits before lunch, maybe more cheese/meat/veg type thing in the afternoon. Weather may make a difference too, if it is cooler temp vs 100 blazing full sun degrees... you might even try serving small cubes of fruits/veg (whatever you choose) in plastic/foam cups, -easy to carry w one hand and even sit down if needed, already bite size...Those fancy cake pops? But I am assuming most visitors will be older and may not like that much sugar...
