There are two types of lettuce: Head Lettuce (ice burg come to mind first) and Leaf Lettuce. Leaf Lettuce is the best because there is no ripe. Just harvest the outside leaves and let the middle continue to grow. Once it decides to flower you won't want to eat the leaves anymore.
