After removing some roots, it would be normal to have some adjustment to the foliage. I've never seen a Sans shrivel from dryness, even if laying on the ground with roots baking in the sun for a week or so, so I also think there's some kind of rotting issue. Did you use new soil? I think that's important to do. Did you water right after putting into new pots? Unless the soil is desert-dry, I don't usually do that. Did you pack the soil tightly? That's something I try to avoid to make sure roots have as much air as possible. Roots need oxygen & moisture at the same time to be able to function, to deliver moisture to foliage. If the shriveling doesn't stabilize in the next few days, removing the plants from the pots again and letting the roots dry for a few days could help. Re-check for unhealthy looking roots & remove any that aren't firm and white or orange (and relatively smooth, not "fuzzy.")
