Looks like Western Salsify. In the evening, my mother used to scope out the ones that were going to bloom first thing in the morning. Then, at the crack of dawn, she would be out there with her hair spray and pruning sheers. Freeze the seed heads in time and snip them with her pruning sheers. Dried flower arrangements everywhere in the house! (until the grandkids discovered them). Smiling
