I've never thinned out my developing peppers -- but you should probably give your plants some support (if you aren't already doing so), because as the peppers grow the plants will be unable to support their weight, especially in the wind or a rainstorm.

You can always start using some of the peppers when they are a little small, and let the others go to grow larger or ripen.
