As you visit them, stay mindful that many of the displays one sees at a trade show can be impractical in various ways. A garden tour of local gardens might be much more inspiring in terms of reality. Are there any botanical gardens or arboretums nearby?
Most stores that sell plants arrange their displays by types of plants. The trees and shrubs are in one area, then perennials in another and usually further separated by shade-loving or sun-loving, with annuals in another. Those basic designations should steer you toward plants that would do well in various spots in your yard, depending on where you want to garden, in an ornamental sense.
As Ken was saying, veggie gardening is its' own thing, and the successful timing of that, per different kind of plant, depends completely on ones' location/climate.
