Yep, freezing corn here, too. Did only about 3 doz. ears a few weeks ago, but they were so small, with such shallow kernels, that I felt like I hardly got anything for my trouble. Did about 5 doz. more ears this week, and they were much larger ears. I buy it all from a local lady, and she said this was a better variety for freezing, too. Wish I could remember the name! I peeked in my freezer, and think I still have about 10 pint freezer boxes left from last year, which is just unheard of. Guess that is what happens when I freeze corn together with my mom, and she manages to send me home with a lot more corn than I usually put up! It was the first time we've done it together in about 20 years, so it was fun to relive those old memories!

Does anyone here put a salt-water solution in their corn? My mom does, and swears it helps prevent freezer burn and prolong how long it lasts in the freezer. I don't care for the taste, myself (which is odd, because I tend to salt my corn lightly before eating it), so I left my boxes of corn "naked." LOL
