This summer my neighbor blessed me with some new Yukon Gold Potatoes and yellow onion from his garden. He said to do the following:

Take 1/2 lb bacon (I use the thick cut) and cut it into about 1 inch pieces (raw - not cooked!)
Slice Potatoes
Chop onions
Seasoning to taste (I use either Paula Dean's seasoning or just salt and pepper)
Fresh Green String Beans (Optional)

Put the bacon in a skillet along with the sliced potatoes, onions and green beans. No other shortening is needed, just the raw bacon. Cover and fry it all together slowly until everything is done clear through and then uncover and, if not done already, crisp it all up from the bacon grease!

Needless to say it is extremely addictive!!!!!
