I agree. I don't make that many things.
Nor do I have the kitchen cabinet space to store hundreds of jars. I don't use many pre-made spice mixes. Mostly, as I cook, I just mix stuff on the fly. In the summer I grow a variety of herbs on my deck. In winter, I use mostly dried. Usually it works out well.
Since I'm on a low sodium diet, I do use some Mrs. Dash products (Table mix, Italian, Southwestern, etc) when I'm in a hurry, and I find those pretty good.
