I love love love chickweed! Right now we've got it all over the place and it's just great. Free lettuce for the taking.
We've never harvested it for indoors eating. We just eat it straight out of the garden. Makes me feel like a deer or goat, out there browsing around.
I ate a dandelion flower yesterday. It was good.
