You'd probably be good to go now. Your greenhouse will give an even light and prevent the legginess. Window sills don't give the plant overhead light and so it has to reach for more, causing it to get too tall and spindly. Being in zone 7, you can probably start most everything now. I'm waiting for April. Even considering the open winter we're having, planting out time won't come until late May or early June.
