I do add chopped or whole banana peels to the compost bin but I also drape the whole peel over my Epiphyllum (Orchid Cactus):
Queen of the Night (Epiphyllum oxypetalum)
Hooker's Orchid Cactus (Epiphyllum hookeri)

and yes, the Staghorn ferns (Platycerium): Common Staghorn Fern (Platycerium bifurcatum) love the potassium from banana peels draped over their fronds too.

Although I don't grow many Roses: Roses (Rosa) they are another plant that seem to like the potassium from banana peels.
