I think most sempervivum do - especially those with pink or red in them. This one goes from pink to purple to almost red sometimes. Some of them are red in the spring and fall, but green in summer. But they can act differently in different areas, climates, temperatures, etc.

Here are some examples of some nice color changes during a year:
Jeanne d' Arc: Hen and Chicks (Sempervivum 'Jeanne d'Arc')
Purple Passion: Hen and Chicks (Sempervivum 'Purple Passion')
