That sure is a succulent, a sedum. Just not sure which one. There are so many of the upright sedum. Might be able to tell more this fall when it blooms. It will want full sun so it won't flop over.

Yes, they can be called hen and biddies. I so love the biddie part. I haven't heard that word in many years. My mom used to call our baby chicks biddies.
I would think the sempervivum will want filtered sun in your harsher summer sun. If in pots you can move them around to find where they will be the happiest. They will need very fast draining soil, and not to much water.
I can see the ones in your photo have little tufts of cilia on the tip of their leaves. How sweet.
