You can use it dried and ground into a powder in soups & sauces. It has an anise flavor. Google tarragon recipes, and I'm sure you'll find all sorts. You can also make a tea with it. It can replace french tarragon in any recipe calling for it. I use it on broiled fish along with other herbs.
