I do not think there would be a problem digging and holding them for a couple of months. A lot depends upon your late fall weather and if it would be nice enough weather to plant them in your new home. Otherwise, dig, divide and pot them until next spring. Others may have better ideas but that is the way I would handle them. Some vendors hold their excess harvests in cold storage until Spring before they sell them.
