I live in South Florida. I got a rosemary bush at the fruit & veggie stall just down the street, 4 years ago. It cost me $0.49. I thought it was just a pitiful little sprig and I didn't expect anything great from it. I planted it in one of the beds, by the passionflower trellis. I basically forgot about it. In my zone, it grows year-round. We don't get enough cold that the rosemary bush would worry about it.
My plants are on auto-pilot here. They get fertilizer, very little trimming and our climate takes care of the rest. Everything is very densely planted, so there are very few weeds. Left to its own devices, that plant has grown to be 6 feet high and just as wide. When the breeze is just right, a delicious resin-like aroma wafts around. It's very enjoyable.
I use rosemary stems to skewer chicken cubes that I have marinated all day with canola oil, crushed garlic, Dijon mustard, white wine, Angostura bitters and chopped fresh rosemary before I barbecue them. I serve that with Pilaf rice; arsenic worries, be gone. They should serve that in upscale restaurants: delicious.
