I grew up in the north and we would wrap apples in newspaper and store in the fruit cellar. We would enjoy fresh apples well into winter in this manner. Perhaps you are also in a cool enough climate for storing fresh apples

I also grew up loving pickled apple rings and have the recipe if you would be interested.
