Yea, everything tastes like chicken no? They are eaten here in Mexico in some areas. It's sad to see them tied up in the markets there to be sold as food. Here in Yucatan, they aren't considered good food. I have neighbors behind me though that are from another state where they are food and I think they are keeping the iguana population in this block down. Also, my dogs consider them food too.

They can really decimate a garden quickly, they are voracious. I guess you could say that the iguanas and the leafcutter ants are the deer and rabbits of the tropics.
