I love to make veggie soup. In fact I just use my crockpot. In the winter it is heavy on root veggies that I buy in the store (potatoes, sweet potatoes, turnips, onions, celery). But I am trying to get more easily grown things that I can use in veggie soup. Thinking on it now. I do have the eggplant and zucchini and will have beans. But I am thinking I could put any type of non lettuce greens in there. Last year I did grow some kale, tried it fried and did not like it so didn't get any this year. I didn't try it in soup which I should have done.
