I don't like prepared mustard, ground mustard or mustard seeds in spice mixes. Trust me, I tried several different mixes trying to figure out which ingredient was making me say yuck. I like to have different mixes on hand for meat.
I don't use sage much but in a turkey patties in gravy recipe I came up with I discovered that was the star ingredient to making them taste so good.
