Oh I'm sure I will have zucchini until I bust, and my chickens will get the extra ones that get too big. I'm not a fan of zucchini bread, I like it most in stir fries, or just cut into strips and fried in olive oil with garlic and dill weed. Also like to include it in pasta sauce, and sometimes I like to bake a pan of mixed veggies in the oven or on the grill that includes them. Once I tried to make a zucchini pie, Ugh, wasn't something I'd recommend. Hilarious! I have my mother's recipe for chocolate zucchini cake, but I don't make it much, as I don't need that sugar. I like to take the very small ones along with crokeneck squash and split them in half length wise. brush them with olive oil, season with garlic powder,seasoned salt, pepper, a few bread crumbs, a few finely chopped onions or chives and some Parmesan cheese and broil for a while. Make great party favors, and are healthy too!
