I'm not sure about pop corn as I've never grown that, but other corn when the ears are mature will tip down and the husk will become loose. The seeds will become hard and dried and may shrivel some. The plant will become brown and dead. Then you can harvest it. I understand that pop corn needs to be stored in a very dry area for quite a while before it will pop. Maybe someone else who knows more about pop corn can help you here.
