A nice south facing window would be nice.., west/east facing also okay. North facing window a bit too weak. The more light you can give the better. Those bloom stalks will follow where the sun is. So I have to do quarter turns of my container, so it does not go too lopsided, and I also have my stake in the container, that way less chance of hitting roots as it will eventually be very top heavy when the blooms are out.

I also do the same, water at the beginning. Then I just wait for more leaf growth, for sure it has started new roots by then. I find amaryllis loves water when those roots are out, but making sure not to wet the crown, keeping media moderately moist. I do my fertilizing after the blooms are gone.
