You could slow it down by giving it cooler temps especially at night. Coffee plants here get 'winter' of sorts with cool nights in the 50's, then they grow like crazy in the summer, and double in size. Ease back on water and fert too, and let it grow slowly for the next few months. Give it 'seasons'.
Ramp it up going into spring, and then re-pot in April or May. When you do re-pot it for the summer, give it a big pot! They are pretty vigorous shrubby plants.
Then next fall, don't re-pot which will stimulate new growth in the winter, taper it back with cooler temps and less water, and prune its top growth as well for the winter. This way you should be able to keep it in the same pot for a year, at least.
At some point you're going to have to decide it's as big as you want it to get, or the pot is as big as you can handle. Then you just have to keep it pruned to size, and again don't stimulate growth in the winter, let it slow down.
