That's a very good question, Hetty... maybe because I like salsa more than applesauce?? *Blush* Big Grin
(or because I actually don't know the definitive answer to the question...)

On the other hand, salsa is a more acidic (lower pH) product than applesauce, and I have somewhat of a bias in terms of feeling higher-acid foods are somewhat safer. Shrug!
