I completely agree. I do like the large lily-type white blooms on a few I've grown but I much prefer the foliage. With Blue Mouse Ears it's simple curiosity and it's diminutive size that make it interesting to see it bloom. Some might cringe but when my best daylily at mom's house comes into bloom, it's neighboring noid variegated hosta stems are immediately pruned. There can only be one star of the show and the tall, red daylily owns it. Yellow heliopsis can stay but the purple hosta flowers just make it messy. JMHO but the purple doesn't flow for me. The hostas provide great color and accent, the blooms just don't fit in.
In the mostly hosta zone at my house, it's mostly about the foliage but they are nice with a variety of blooms. I don't cut or prune on those. Grouped amongst their own I find the blooms more interesting.
