Here in zone 6 the nights are getting cool-40's--and the days are in the low 70's. I have quite a few Gypsy peppers on my plants, but they are still a pale green-yellow color. Should I harvest them now, or will they turn orange or red if I leave them on longer? If I do harvest them now will the flavor really be lacking? If I remember correctly, I planted them in beginning to mid June, so they've had plenty of time to grow! Thanks so much for any advice you can give me!!
